Chilli Garlic Butter Roasted Cabbage Wedges is a delicious and easy-to-make side dish featuring tender, charred cabbage quarters generously coated with a flavorful blend of chilli, garlic, and butter. Toasted panko breadcrumbs with garlic and crunchy hazelnuts add texture, while fresh parsley brightens the dish, making it perfect for a savory, satisfying vegetable option.

Ingredients

Main Ingredients

  • 1 sweetheart cabbage (pointed cabbage in the US), cut into quarters
  • 4 tbsp butter (divided)
  • 1 tsp onion powder
  • 1 tsp garlic powder (divided)
  • ½ tsp salt
  • 1 tbsp chilli crisp or 1 tsp dried chilli flakes

Topping Ingredients

  • 4 tbsp Panko breadcrumbs
  • 1 tbsp parsley, chopped
  • 1 tbsp hazelnuts, chopped (optional)

Instructions

  1. Preheat and Prepare Cabbage: Preheat your oven to 200°C (400°F). While the oven is heating, cut the sweetheart cabbage into four equal quarters, keeping the core intact to hold the wedges together during roasting.
  2. Season and Roast Cabbage: Melt 3 tablespoons of the butter and mix it with onion powder, 1 teaspoon garlic powder, salt, and chilli crisp or flakes. Brush this flavorful mixture generously all over each cabbage quarter, including the bottoms. Arrange the cabbage wedges on a baking sheet and roast in the preheated oven for approximately 20 minutes, or up to 35 minutes if your cabbage is denser, until the outside is nicely charred and the insides are still slightly crisp.
  3. Make Garlic Breadcrumbs: While the cabbage roasts, melt the remaining tablespoon of butter in a pan over medium heat. Add the panko breadcrumbs and the remaining garlic powder, stirring continuously to toast the crumbs evenly without burning. Once golden brown, remove from heat immediately to preserve crunch.
  4. Prepare Toppings and Serve: Chop the hazelnuts and fresh parsley finely. Once the cabbage wedges are roasted, sprinkle them generously with the toasted garlic breadcrumbs, followed by the chopped hazelnuts and parsley for added texture and freshness. Serve immediately to enjoy the contrast of crispy breadcrumbs and tender cabbage.

Notes

  • Adjust roasting time based on the density of your cabbage to ensure tender yet slightly crispy wedges.
  • For a spicier variation, increase the amount of chilli crisp or dried chilli flakes.
  • Hazelnuts are optional but provide a pleasant crunch and nutty flavor; you can substitute with other nuts if preferred.
  • Use fresh parsley just before serving to maintain its bright flavor and color.
  • Panko breadcrumbs give a light, crispy texture—regular breadcrumbs will work but may be denser.
