This Chili Lime Grilled Corn on the Cob recipe features fresh corn grilled to perfection, coated with a zesty chili butter and finished with a squeeze of lime and fresh cilantro. It’s a quick and flavorful side dish perfect for BBQs and summer gatherings.

Ingredients

Corn and Seasoning

  • 4 cobs corn (husk removed)
  • 1 teaspoon cooking oil
  • ⅛ teaspoon sea salt

Chili Butter

  • 1 tablespoon butter
  • 1 teaspoon chili powder

Finishing

  • 1 lime
  • Chopped cilantro (to serve)

Instructions

  1. Preheat the Grill: Preheat your BBQ to high heat to ensure the corn cooks evenly with a nice char.
  2. Grill the Corn: Coat the corn cobs in cooking oil, place them directly on the grill, and cook for about 10 minutes, turning the corn every few minutes so all sides are evenly grilled.
  3. Prepare the Chili Butter: While the corn is grilling, melt the butter in a small frying pan. Stir in the chili powder and sea salt until well combined to create a flavorful chili butter.
  4. Brush the Butter on the Corn: Once the corn is grilled, remove it from the BBQ and brush the chili butter evenly over each cob. If you don’t have a brush, use a spoon to pour the butter evenly.
  5. Finish and Serve: Squeeze fresh lime juice over the buttered corn, sprinkle chopped cilantro on top, and serve immediately to enjoy the vibrant flavors.

Notes

  • Use fresh corn for the best flavor and texture.
  • Adjust the amount of chili powder to your desired spice level.
  • If you don’t have a BBQ grill, you can use a stovetop grill pan or broiler.
  • For extra zest, add a pinch of smoked paprika to the chili butter.
  • Serve as a side dish with grilled meats or enjoy on its own as a snack.
