Ingredients

Meat and Protein

  • 1 Pound Ground Beef
  • 2 Cans Chili (Amy’s Medium Vegetarian chili recommended)

Vegetables and Aromatics

  • 1 Small Yellow Onion, finely diced

Spices and Seasonings

  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Ground Black Pepper

Dairy and Cheese

  • 1 ¼ Cups Cheddar Cheese, finely grated

Other

  • 8 Flour Tortillas (taco or fajita size)
  • Cooking spray

Instructions

  1. Preheat Oven and Prepare Skillet: Preheat your oven to 400°F (204°C). Place a large skillet on the stovetop over medium heat to get it ready for cooking the beef mixture.
  2. Brown the Ground Beef: Add the ground beef to the hot skillet and cook for 3-4 minutes. Stir occasionally until the beef begins to brown evenly, breaking it apart as it cooks.
  3. Add Onion and Seasonings: Add the finely diced yellow onion, garlic powder, and ground black pepper to the skillet. Continue to sauté for another 3-4 minutes, stirring so that the onions soften and the beef is fully browned and cooked through.
  4. Mix in Chili and Cheese: Stir in the canned chili and ½ cup of the shredded cheddar cheese into the beef mixture. Mix well until the cheese is melted and the filling is thoroughly combined. Remove the skillet from heat.
  5. Fill Tortillas: Line a baking sheet with parchment paper. Spoon a generous amount of the chili-beef mixture onto each tortilla, then sprinkle an additional 1 to 2 tablespoons of cheddar cheese over the filling.
  6. Shape and Prepare for Baking: Fold each tortilla closed to enclose the filling. Arrange the folded tacos on the prepared baking sheet. Lightly spray the tops of the tortillas with your preferred cooking spray to help them crisp in the oven.
  7. Bake and Broil: Bake the tacos in the preheated oven at 400°F for 12 minutes. Then switch the oven to broil and cook for an additional 2 minutes or until the tops are golden and slightly browned. Keep a close eye during broiling to prevent burning.
  8. Serve: Remove the baked tacos from the oven and garnish with freshly chopped parsley if desired. Serve immediately and enjoy your hearty chili cheese beef tacos!

Notes

  • You can substitute the canned chili with your preferred brand or homemade chili for varied flavor.
  • Using vegetarian chili keeps the dish a bit lighter, but traditional meat chili works well too.
  • Flour tortillas provide a soft texture, but corn tortillas may be used for a gluten-free option if available.
  • Watch the broiler closely as it can quickly burn the tops of the tacos.
  • Additional toppings like sour cream, salsa, or avocado can be added for extra flavor.
