Ingredients

Filling

  • 2 teaspoons vegetable oil
  • 1 pound ground chicken
  • 5 ounces shiitake mushrooms, stems discarded and caps finely diced
  • 1/2 cup onion, finely diced
  • 8 ounce can water chestnuts, drained and finely diced
  • 1 1/2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • Salt and pepper, to taste

Sauce & Garnish

  • 5 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons sesame oil
  • 1/3 cup sliced green onions
  • 1 head butter lettuce, leaves separated

Instructions

  1. Heat oil and cook chicken: Heat the vegetable oil in a large pan over medium-high heat. Add the ground chicken and season with salt and pepper to your liking. Cook for 5-6 minutes, breaking up the meat with a spatula, until it is mostly cooked through and no longer pink.
  2. Add vegetables: Stir in the diced shiitake mushrooms and onion. Continue cooking for 4-5 minutes until the vegetables soften and release their moisture, blending their flavors with the chicken.
  3. Add aromatics and water chestnuts: Mix in the finely diced water chestnuts, minced garlic, and minced ginger. Cook for an additional minute to allow their fragrant aromas to infuse the mixture.
  4. Prepare the sauce: In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, and sesame oil until well combined to create a flavorful sauce.
  5. Combine sauce with chicken mixture: Pour the prepared sauce over the chicken and vegetable mixture and toss thoroughly to coat everything evenly with the sauce.
  6. Add garnish: Sprinkle the sliced green onions over the mixture and stir gently to distribute them throughout.
  7. Serve in lettuce cups: Spoon the warm chicken filling into individual butter lettuce leaves, using the crisp cups as edible wrappers. Serve immediately and enjoy your fresh chicken lettuce wraps.

Notes

  • Use fresh butter lettuce for best results as it provides tender yet sturdy leaves perfect for wrapping.
  • Ground chicken can be substituted with ground turkey or pork if preferred.
  • Adjust soy sauce and hoisin sauce amounts to taste to control saltiness and sweetness.
  • For a spicy kick, add some Sriracha or chili flakes to the sauce mix.
  • Leftover filling can be refrigerated up to 3 days and reheated gently before serving.
