Ingredients

Main Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small yellow onion, diced
  • 4 cups cooked shredded chicken
  • 1 tablespoon taco seasoning, homemade or store bought
  • 1 (4-ounce) can diced green chilies
  • 1 (19-ounce) can red enchilada sauce
  • 8 (6-inch) corn tortillas, cut into 1 x 3-inch strips
  • 2 cups shredded Mexican blend cheese

For Serving (optional)

  • Fresh cilantro leaves
  • Sour cream

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and position a rack in the center to ensure even baking.
  2. Cook the onion: Heat the olive oil in a large ovenproof skillet over medium heat until shimmering. Add the diced onion and cook, stirring occasionally, until it turns soft and translucent, approximately 5 minutes.
  3. Add chicken and sauce: Stir in the shredded chicken, taco seasoning, diced green chilies, and red enchilada sauce. Mix everything well, then add the tortilla strips. Increase heat to high and bring the mixture to a boil. Reduce heat and let it simmer, stirring frequently, until the tortilla strips soften, about 2 minutes. Try to separate the strips as much as you can. Remove skillet from heat afterward.
  4. Bake: Sprinkle the shredded Mexican blend cheese evenly over the top. Transfer the skillet to the preheated oven and bake until the cheese melts fully and the sauce is bubbling, roughly 25 minutes.
  5. Serve: Garnish with fresh cilantro leaves and add a dollop of sour cream if desired. Serve hot straight from the skillet for a hearty and satisfying meal.

Notes

  • Use an ovenproof skillet to avoid transferring the mixture to another dish for baking.
  • Leftover cooked chicken works perfectly, making this recipe ideal for meal prep.
  • Adjust the level of spice by choosing mild or hot taco seasoning and enchilada sauce.
  • For gluten-free, ensure that the taco seasoning and enchilada sauce do not contain gluten.
  • To add extra depth, consider topping with sliced jalapeños or a squeeze of fresh lime before serving.
