Perfect for a quick and satisfying meal in just 20 minutes.

Ingredients

Chicken and Marinade

  • 600g / 1.3lb boneless skinless chicken thighs
  • 1 1/2 tbsp Caesar dressing
  • 1 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp dried rosemary
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1/8 tsp dried thyme

Toppings and Assembly

  • 8 slices streaky bacon, cooked to preference
  • 1 large head of romaine lettuce, chopped
  • 30g / 1oz shaved Parmesan
  • 2 tbsp Caesar dressing (plus more to serve if desired)
  • 4 Greek-style flatbreads
  • Croutons (quantity to preference)

Instructions

  1. Prepare and Marinate Chicken: Slice the chicken thighs into small, uniform bite-sized pieces. In a large bowl, combine the chicken with 1 1/2 tablespoons of Caesar dressing, 1 tablespoon of olive oil, salt, paprika, dried rosemary, garlic powder, onion powder, black pepper, and dried thyme. Toss to coat evenly. Thread the marinated chicken pieces onto 4 large skewers, making sure the pieces are close together but not cramped.
  2. Cook Chicken Skewers: Heat a large griddle pan or regular pan over medium-high heat. Add the chicken skewers and cook for approximately 10-12 minutes, flipping once halfway through, until the chicken is lightly charred on the outside and fully cooked through (internal temperature should reach 74°C / 165°F). Alternatively, the skewers can be cooked on a pre-oiled grill to prevent sticking.
  3. Toss Lettuce and Assemble Flatbreads: In a bowl, toss the chopped romaine lettuce with about 2 tablespoons of Caesar dressing (adjust to taste). Add the shaved Parmesan and mix to combine. Lay out the Greek flatbreads and top each with the dressed lettuce, cooked bacon slices, grilled chicken from the skewers, and croutons. Drizzle additional Caesar dressing over the top as desired before serving.

Notes

  • Use boneless skinless chicken thighs for juicier, more flavorful meat compared to breasts.
  • Cook bacon to your preferred crispiness before assembling the flatbreads.
  • Croutons can be store-bought or homemade for added crunch and texture.
  • Ensure chicken is cooked to a safe internal temperature of 74°C (165°F) to avoid foodborne illness.
  • For easier skewering, soak wooden skewers in water for 20 minutes prior to use to prevent burning.
