This layered Bean Dip is a crowd-pleasing appetizer perfect for parties or casual gatherings. Creamy layers of seasoned cream cheese and sour cream, hearty refried beans, tangy diced tomatoes, and melted cheddar and Monterey jack cheeses come together in a flavorful, baked dish served hot with tortilla chips.

Ingredients

Base Layer

  • 8 oz. cream cheese, softened
  • ½ cup sour cream
  • 1 tablespoon taco seasoning

Bean Layer

  • 1 (16 oz.) can refried beans
  • 1 tablespoon taco seasoning

Tomato Layer

  • 2 (10 oz.) cans Rotel diced tomatoes, drained very well

Cheese Layer

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese (or pepper jack)

Toppings (optional)

  • Cilantro
  • Green onions
  • Red onions
  • Tomatoes
  • Jalapeno peppers

Instructions

  1. Preheat Oven: Preheat your oven to 350° F to prepare for baking the dip.
  2. Mix Base Layer: In a medium bowl, combine the softened cream cheese and sour cream until smooth and well blended. Stir in 1 tablespoon of taco seasoning to infuse flavor.
  3. Spread Base Layer: Evenly spread the cream cheese and sour cream mixture on the bottom of a 9 x 13-inch baking dish to create the first layer.
  4. Prepare Bean Layer: Using the same bowl, mix the refried beans with the remaining 1 tablespoon of taco seasoning. Spread this mixture evenly over the base layer in the baking dish.
  5. Add Tomato Layer: Pat the diced Rotel tomatoes with paper towels to remove excess moisture, then evenly layer them over the refried beans to avoid sogginess.
  6. Add Cheese and Bake: Sprinkle an even layer of shredded cheddar and Monterey jack cheeses over the tomato layer. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes until cheese is fully melted and bubbly.
  7. Garnish and Serve: Take the dish out of the oven and top with your choice of cilantro, green onions, red onions, tomatoes, and jalapeno peppers. Serve warm with tortilla chips for dipping.

Notes

  • Make sure to drain and pat dry the diced tomatoes thoroughly to prevent the dip from becoming watery.
  • You can substitute the Monterey jack cheese with pepper jack for a spicier kick.
  • The dip can be prepared ahead of time and baked right before serving.
  • Adjust amount of taco seasoning to taste based on desired spice level.
  • Use a glass or ceramic baking dish for even heating.
