Ingredients

Potatoes

  • 2 lb gold potatoes, cut into bite-sized chunks
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Ground Beef

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp onion powder
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 2 tsp chili powder

Toppings

  • 2-3 cups shredded cheddar cheese or Mexican cheese blend
  • Guacamole
  • Sour cream
  • Hot sauce or salsa
  • Chopped tomatoes
  • Pickled onion
  • Cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get ready for roasting the potatoes.
  2. Roast Potatoes: Spread the bite-sized gold potatoes on a parchment-lined baking sheet, making sure they are dry for crispiness. Drizzle with 2 tablespoons of olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat evenly and spread in a single layer. Roast in the oven for 35-45 minutes, stirring once halfway (after about 20 minutes) to ensure even cooking. The potatoes should be golden brown and tender when done.
  3. Cook Ground Beef: While the potatoes roast, heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Add the ground beef, breaking it apart with a wooden spoon as it cooks until no longer pink. Season with 1 teaspoon salt, 1/4 teaspoon black pepper, onion powder, garlic powder, paprika, and chili powder. Stir well to evenly coat and then remove from heat.
  4. Prepare Toppings: While the potatoes finish roasting, prepare your desired toppings including guacamole, sour cream, chopped tomatoes, pickled onions, cilantro, and hot sauce or salsa.
  5. Assemble and Melt Cheese: Once the potatoes are cooked, evenly spread the seasoned ground beef over them on the baking sheet. Sprinkle shredded cheddar or Mexican cheese blend over the top. Return the baking sheet to the oven and bake for an additional 2-3 minutes until the cheese melts completely.
  6. Serve: Remove from the oven and serve immediately, topped with the prepared fresh toppings such as guacamole, sour cream, tomatoes or salsa, pickled onions, cilantro, and hot sauce as desired for a flavorful and satisfying taco bowl.

Notes

  • Make sure potatoes are dry before roasting to achieve maximum crispiness.
  • Use a parchment-lined baking sheet to prevent sticking and for easy cleanup.
  • You can substitute ground turkey or chicken for ground beef if preferred.
  • Add extra spices or adjust seasoning to taste for more heat or flavor.
  • Leftover ingredients like toppings can be served on the side for customization.
