Ingredients

Main Ingredients

  • 8 corn or flour tortillas
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 clove of garlic, chopped
  • 1 (4 ounce) can fire roasted chopped green chiles, drained
  • 1 (15.5 ounce) can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • About 3 cups enchilada sauce (divided)
  • 2 cups shredded Mexican style 4 blend cheese (or any preferred cheese)

Instructions

  1. Brown the beef and onion: In a skillet over medium heat on the stove, brown the ground beef and chopped onion together until the beef is fully cooked. Drain excess fat and return the mixture to the skillet.
  2. Add seasonings and simmer: To the cooked beef, add chopped garlic, drained green chiles, rinsed black beans, cumin, black pepper, salt, and 1 1/4 cups of enchilada sauce. Stir well and cook on low heat for 8 to 10 minutes to allow flavors to meld.
  3. Prepare the baking dish and tortillas: Spread 3 tablespoons of enchilada sauce evenly on the bottom of a 9 x 13 inch baking dish. Stack the tortillas on a plate and microwave them for about 30 seconds to warm and soften them, making them easier to roll.
  4. Assemble the enchiladas: Fill each warm tortilla with the beef mixture, then roll it up and place seam side down in the prepared baking dish. Repeat with all tortillas.
  5. Add sauce and cheese: Pour and spread 1 cup of the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the shredded cheese evenly over the top.
  6. Bake the enchiladas: Preheat the oven to 350°F (175°C). Bake the assembled enchiladas for 25 minutes until the cheese is melted and bubbly.
  7. Garnish and serve: Remove from the oven and garnish with toppings such as chopped green onions, chopped tomatoes, fresh parsley, or sour cream as desired. Serve hot.

Notes

  • Use either corn or flour tortillas based on your preference.
  • Microwaving tortillas makes them more pliable and easier to roll without cracking.
  • You can adjust the spice level by adding more or less green chiles or enchilada sauce.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
  • For a vegetarian version, substitute the ground beef with cooked vegetables or a plant-based protein.
