Ingredients

Meat Mixture

  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced
  • 1/4 cup mayonnaise

Cheese

  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or use more sliced cheese)

Slider Assembly

  • 24 dinner rolls (or 2 packs of 12)
  • 2 Tbsp unsalted butter, melted (plus more to grease baking sheet)
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 350˚F (175˚C). Grease the bottom of a rimmed baking sheet thoroughly with melted butter to prevent sticking and add flavor.
  2. Cook the ground beef and onions: Heat a large skillet over medium-high heat and add 1/2 tablespoon olive oil. Add the diced onion and sauté briefly until fragrant. Add the ground beef to the skillet, breaking it up with a spatula. Season once combined with 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder. Continue cooking and stirring until the beef is fully cooked through. Remove the skillet from heat.
  3. Drain excess fat and mix in mayonnaise: Carefully tilt the skillet and spoon off excess fat into a safe container or discard. Return the skillet to the stove or keep aside, then stir in 1/4 cup mayonnaise into the cooked beef mixture for added creaminess.
  4. Assemble the sliders: Slice the dinner rolls in half horizontally. Place the bottom halves evenly spaced on the buttered baking sheet. Layer each with a slice of cheddar cheese. Spread the seasoned beef mixture evenly on top of the cheese, using the back of a spatula to square off the edges for neatness. Sprinkle shredded cheddar cheese evenly over the beef.
  5. Add the tops and prepare for baking: Place the top halves of the buns, cut side down, over the cheese layer. Brush the tops generously with the remaining melted butter and immediately sprinkle with sesame seeds for added texture and flavor.
  6. Bake the sliders: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese has melted and the tops of the buns are golden brown and slightly crisp.

Notes

  • Use lean ground beef with 90/10 or 93/7 fat content to balance flavor and reduce excess grease.
  • Mayonnaise adds moisture and creaminess to the beef mixture, but it can be omitted or substituted with sour cream if preferred.
  • If you want extra cheesy sliders, add more shredded cheddar on top before placing the bun tops.
  • Make sure to butter the baking sheet well to prevent the rolls from sticking and to enhance browning.
  • For variation, add pickles, mustard, or ketchup on the top buns before baking or after baking for added flavor.
  • These sliders freeze well before baking—assemble and freeze on the baking sheet, then bake directly from frozen, adding a few extra minutes to the baking time.
