These Egg White Bites are a protein-packed, savory breakfast option featuring a creamy blend of egg whites, mozzarella, cottage cheese, and feta, combined with roasted red peppers and spinach. Baked in a water bath for a tender texture, they make for a healthy and delicious start to your day.

Ingredients

Egg White Mixture

  • 16 ounces egg whites
  • ½ cup shredded mozzarella cheese
  • ½ cup whole milk cottage cheese
  • ¼ cup crumbled feta cheese

Vegetables and Seasoning

  • ¼ cup roasted red pepper, finely diced
  • ¼ cup spinach, finely chopped
  • Salt and pepper, to taste

Other

  • Cooking spray
  • Boiling water

Instructions

  1. Preheat Oven and Prepare Muffin Tray: Preheat your oven to 350ºF. Place a 12-cup silicone muffin tray on a baking sheet and coat it with non-stick cooking spray to prevent sticking.
  2. Blend Egg White Mixture: In a blender, combine the egg whites, shredded mozzarella, cottage cheese, and crumbled feta. Blend the mixture until it is smooth and bubbly, which should take about 30 seconds, ensuring an even and fluffy texture.
  3. Assemble Bites: Evenly divide the finely diced roasted red peppers and chopped spinach into each silicone muffin cup. Then pour the blended egg white mixture over the vegetables, filling each cup nearly to the top. Season each with salt and freshly ground black pepper to taste.
  4. Prepare Water Bath and Bake: Place the baking sheet with the silicone tray in the oven’s middle rack. Carefully pour boiling water into the baking sheet until it comes about halfway up the sides of the silicone cups. This water bath helps cook the egg bites gently and evenly.
  5. Bake Until Set: Bake for 30-35 minutes, or until the tops of the egg white bites are firm to the touch. Once done, remove from the oven and let the bites cool for 5 minutes in the silicone tray before carefully removing them.
