These Cheddar Cheese Crisps are irresistibly crispy baked snacks bursting with sharp cheddar flavor and a hint of spice. Made with butter, extra-sharp cheddar, and Rice Krispies for texture, these savory crisps are perfect for parties, appetizers, or a crunchy nibble anytime.

Ingredients

Cheese Crisp Dough

  • ½ cup butter, softened (1 stick)
  • 4 ounces extra-sharp yellow/orange cheddar cheese, freshly and finely shredded
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 1 cup all-purpose flour
  • 1 cup Rice Krispies cereal

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crisps.
  2. Mix Butter and Cheese: In the bowl of a stand mixer fitted with a paddle attachment, or using a large bowl and an electric hand mixer, combine the softened butter, finely shredded extra-sharp cheddar cheese, Worcestershire sauce, cayenne pepper, paprika, and garlic powder. Mix on medium speed until well combined for a creamy, flavorful base.
  3. Add Flour: Gradually add the all-purpose flour to the mixture, mixing on low speed just until incorporated. The dough will be stiff at this point.
  4. Incorporate Rice Krispies: Remove the bowl from the mixer and gently fold the Rice Krispies cereal into the dough by hand until evenly distributed, adding texture and crunch.
  5. Shape the Dough Balls: Roll the dough into tablespoon-sized balls, aiming for about 28 balls total. Place them about 2 inches apart on ungreased, preferably light-colored baking sheets. If the dough sticks, dampen your hands slightly with water to make rolling easier.
  6. Flatten the Balls: Using your fingers, gently flatten each ball into rounds approximately 1½ inches in diameter and ¼ inch thick, ensuring even baking.
  7. Bake the Crisps: Bake for 20 to 25 minutes until the crisps are light golden brown. If you cannot fit both pans on the middle rack, place one pan in the upper third and the other in the lower third of the oven, rotating them halfway through to ensure even cooking.
  8. Cool and Serve: Transfer the baked crisps to wire racks and allow them to cool completely, about 15 minutes. This helps them crisp up fully before serving.

Notes

  • Use freshly shredded extra-sharp cheddar for the best flavor and texture.
  • Light-colored baking sheets help prevent over-browning on the bottoms of the crisps.
  • If the dough is sticky, wet your hands slightly to roll the balls easily.
  • Store cooled crisps in an airtight container to maintain crispness.
  • Adjust cayenne pepper for desired spice level or omit if you prefer milder crisps.
