Classic homemade sausage rolls featuring flaky puff pastry wrapped around a savory ground pork sausage filling, enhanced with onions, garlic, cheddar cheese, and aromatic herbs. Perfect as a party appetizer or savory snack, these sausage rolls are baked until golden brown and crispy.

Ingredients

Puff Pastry

  • 1 (17.3 oz.) box puff pastry sheets
  • 1 teaspoon olive oil

Sausage Filling

  • 1/3 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 lb. ground pork sausage
  • ½ cup panko breadcrumbs
  • ½ cup cheddar cheese, grated
  • 2 eggs, divided
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1 tablespoon water or milk

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C). This step can be completed after assembling half of the sausage rolls if preferred.
  2. Thaw Puff Pastry: Allow the puff pastry sheets to thaw according to package instructions. Keep them wrapped to prevent drying out during thawing.
  3. Sauté Onions and Garlic: Heat olive oil in a small skillet over medium heat. Add diced onions and minced garlic, cooking for 5-7 minutes until softened. Remove from heat and let cool.
  4. Prepare Sausage Mixture: In a large bowl, combine ground pork sausage, cooled onions and garlic, panko breadcrumbs, grated cheddar cheese, one whisked egg, Dijon mustard, and dried parsley. Mix thoroughly to integrate all ingredients.
  5. Portion Sausage Mixture: Separate half of the sausage mixture onto a plate and divide it into 9 equal portions. Refrigerate the remaining mixture for later use.
  6. Prepare Puff Pastry: Remove one puff pastry sheet from the package and keep the other refrigerated and covered. Lay the sheet flat and cut along the pre-creased lines to divide into 9 squares (3x3 grid). Then, cut each rectangle twice to make the required squares.
  7. Assemble Sausage Rolls: Shape each sausage portion into a cylindrical link and place it in the center of each pastry square. Roll the pastry around the sausage to form a cylinder and place seam-side down. Cut each pastry roll in half, yielding two smaller sausage rolls. Transfer to a plate and cover with plastic wrap. Refrigerate.
  8. Repeat Assembly: Repeat the previous steps with the remaining puff pastry sheet and sausage mixture. Cover with plastic wrap and refrigerate if not baking immediately.
  9. Prepare for Baking: Lightly grease a large light-colored baking sheet (approximately 11.2 x 15.7 inches). Arrange the sausage rolls spaced evenly on the sheet.
  10. Apply Egg Wash: Whisk the remaining egg with water or milk to create an egg wash. Use a pastry brush to evenly coat each sausage roll, promoting a golden, shiny crust.
  11. Bake: Bake uncovered in the preheated oven at 400°F for 20-25 minutes. If baking immediately, 20 minutes is sufficient; if baking cold from the fridge, allow about 25 minutes until golden brown on top.
  12. Serve: Remove from the oven and allow to cool slightly. Serve warm with your choice of dipping sauces, such as mustard, ketchup, or spicy mayo.

Notes

  • You can store assembled sausage rolls covered in the refrigerator for up to 1 day before baking.
  • Try different dipping sauces like barbecue sauce, honey mustard, or sour cream and chives for variety.
  • Ensure puff pastry is well thawed to prevent tearing during assembly.
  • Ground pork sausage can be substituted with ground chicken or turkey for a leaner option.
  • Use freshly grated cheddar cheese for best melting and flavor.
