Ingredients

Egg Layer

  • 4 large cold eggs
  • 3 tablespoons unsalted butter, melted
  • Salt, to taste
  • Corn, vegetable, or grapeseed oil, for greasing

Cream Cheese Layer

  • 6 ounces cream cheese
  • ½ cup sour cream
  • ¼ cup very finely chopped chives
  • Salt, to taste
  • 1 medium shallot

Topping

  • 3 to 4 ounces caviar or other cured fish roe (such as paddlefish roe, trout roe, or tobiko)
  • Crunchy things, such as waffle fries, butter crackers, flavored tortilla chips, endive spears, Little Gem lettuce leaves, breakfast radishes

Instructions

  1. Prepare the cream cheese: Cut the cream cheese into cubes and place in a medium bowl to soften at room temperature. This helps achieve a smooth mixture for layering.
  2. Cook the eggs: Bring a medium pot of water to a boil. Using a spider or slotted spoon, carefully lower the cold eggs into the boiling water. Reduce heat to maintain a gentle simmer and cook for 10 minutes. Drain the eggs and immediately submerge them in ice-cold water to stop cooking. Crack the shells all over, then peel starting from the wide end.
  3. Prepare the egg mixture: Cut the peeled eggs in half. Scoop the yolks into a medium bowl and mash them smooth with a fork. Very finely chop the egg whites and add them to the yolks. Stir in the melted butter until combined. Season lightly with salt, then gently fold in chopped egg whites to create an even mixture.
  4. Form the egg layer: Lightly grease the inside of a 6- or 8-inch ring mold with oil, or use a small shallow bowl if a ring mold is unavailable. Place the mold on your serving plate. Scrape the egg mixture into the mold and press down evenly with the back of a small spoon. Refrigerate to chill and set.
  5. Prepare and add shallots: Peel and very finely chop the shallot. Rinse in a fine-mesh strainer with cool water, drain thoroughly, and pat dry with a paper towel. Evenly spread the shallots over the chilled egg layer, gently pressing them down. Return to the refrigerator.
  6. Make cream cheese layer: Whisk the softened cream cheese until smooth. Add sour cream and chopped chives, seasoning lightly with salt. Dollop this mixture over the shallot layer and spread evenly. Cover lightly with plastic wrap and chill for at least 1 hour or up to 12 hours until firm.
  7. Add caviar and serve: Just before serving, use a non-metal spoon to evenly spread the caviar over the cream cheese layer. Heat an offset spatula under hot running water, dry it, then run the spatula between the mold and pie to loosen. Gently lift off the mold and serve immediately with your choice of crunchy accompaniments such as waffle fries, butter crackers, or radishes.

Notes

  • Use a plastic or bone spoon for handling caviar to avoid metallic taste.
  • Chilling the pie for several hours or overnight improves flavor and texture integration.
  • You can substitute the caviar with other types of cured fish roe according to availability and preference.
  • Ensure eggs are peeled carefully to maintain smooth layers.
  • Serve chilled and consume within the same day for best freshness.
