This creamy and comforting Broccoli Cheese Soup features tender broccoli florets and grated carrots simmered in a flavorful vegetable broth, thickened with a butter and flour roux, then enriched with sharp cheddar cheese and creamy heavy cream. Perfect for a cozy meal, this soup is easy to make on the stovetop and delivers rich, cheesy goodness in every bowl.

Ingredients

Vegetables and Aromatics

  • 1 tablespoon olive or avocado oil
  • 1/2 large onion, finely diced
  • 1-2 cloves garlic, minced
  • 4 cups finely chopped broccoli florets
  • 2 medium to large carrots, grated or finely diced

Dairy and Cheese

  • 4 tablespoons butter
  • 8 ounces (2 cups) sharp or extra sharp cheddar cheese, grated
  • 1 cup heavy cream

Other Ingredients

  • 1/2 cup flour
  • 1 teaspoon salt, plus more to taste
  • 1/4 teaspoon ground black pepper, plus more to taste
  • 8 cups vegetable broth

Instructions

  1. Heat the aromatics: Heat the olive or avocado oil in a large pot over medium to high heat. Add the finely diced onion and cook, stirring often, until softened and translucent, about 5 minutes. Then add the minced garlic and cook for 30 to 60 seconds until fragrant.
  2. Cook the vegetables: Add butter, chopped broccoli, and grated carrots to the pot. Stir while cooking over medium heat for a few minutes to start softening the veggies.
  3. Add flour and seasonings: Reduce the heat. Quickly stir in the flour, salt, and pepper, mixing thoroughly with the vegetables. The flour won’t dissolve completely, but this forms a roux to thicken the soup.
  4. Add broth and simmer: Pour in the vegetable broth and cook over medium heat for about 20 minutes until the soup thickens slightly and the vegetables are tender.
  5. Finish with cheese and cream: Stir in the grated sharp cheddar cheese and heavy cream until fully melted and incorporated. Serve the soup immediately for best flavor. Leftovers taste even better the next day.

Notes

  • Using sharp or extra sharp cheddar cheese provides a stronger cheesy flavor.
  • The soup thickens as it simmers thanks to the flour roux combined with the cheese and cream.
  • For added texture and protein, top the soup with a dollop of sour cream and cooked beef crumbles.
  • Serve with crusty bread to make it a complete meal.
  • Adjust salt and pepper to taste after adding cheese since cheese adds some saltiness.
