Ingredients

Beef and Seasoning

  • 2 1/4 to 2 1/2 pounds organic beef chuck roast, cut into medium-size chunks
  • Salt, to taste
  • Black pepper, to taste
  • 1 1/2 teaspoons paprika
  • 5 level tablespoons flour, divided
  • Olive oil

Vegetables and Herbs

  • 1 onion, diced
  • 2 carrots, peeled and sliced into medium-large chunks
  • 2 ribs celery, sliced into medium-large chunks
  • 1 large parsnip, peeled and sliced into medium-large chunks
  • 6 cloves garlic, pressed through garlic press
  • 2 teaspoons Italian seasoning
  • 2 small bay leaves
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon white pepper
  • 1 tablespoon tomato paste
  • 1/2 cup red wine (your favorite drinking wine)
  • 2 cups beef stock
  • 8 ounces yellow baby potatoes, halved or quartered
  • 3/4 cup petite frozen peas, thawed
  • 1 tablespoon chopped parsley
  • 1 teaspoon fresh thyme leaves

Pastry and Finish

  • 1 sheet puff pastry (keep frozen until ready to roll out)
  • 1 egg yolk, whisked, for egg wash

Instructions

  1. Prep Ingredients: Begin by gathering and prepping all of your ingredients according to the list above, except for the puff pastry sheet, which should remain frozen until ready to use. This organization will streamline the cooking process.
  2. Season and Flour Beef: In a large bowl, add the beef chunks and season generously with salt, black pepper, and paprika. Sprinkle over 2 tablespoons of flour and toss to coat the beef evenly with the seasoning and flour.
  3. Sear Beef: Heat 2 to 3 tablespoons olive oil in a large deep pot or Dutch oven over medium-high heat. Working in batches, add the beef pieces and sear them until deeply browned on all sides. Remove seared beef with a slotted spoon and set aside.
  4. Sauté Vegetables and Herbs: In the same pot, add a little more oil if needed. Sauté onion, carrot, celery, and parsnip for a few minutes until they begin to soften. Add garlic, Italian seasoning, bay leaves, dried thyme, and white pepper, and stir briefly until fragrant.
  5. Add Tomato Paste and Wine: Stir in tomato paste until incorporated, then pour in the red wine. Allow the wine to bubble and reduce for about two minutes to concentrate the flavors. Sprinkle the remaining 3 tablespoons of flour evenly and stir well to thicken.
  6. Simmer Stew: Return the beef to the pot along with beef stock and baby potatoes. Bring to a vigorous simmer or boil, then reduce heat to gently simmer uncovered for approximately 2 1/2 hours, stirring occasionally, until meat is very tender. Cover for the last 15-20 minutes if the sauce reduces too much.
  7. Finish Filling: Stir in the thawed peas, chopped parsley, and fresh thyme leaves. Remove the pot from heat and allow the filling to cool to room temperature. This can be done the day before or expedited by refrigerating.
  8. Prepare Puff Pastry: Once the stew is mostly cooled, remove the frozen puff pastry sheet and thaw for 30 to 45 minutes as per package instructions or until pliable.
  9. Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C). Select a large, deep baking dish approximately 2 1/2 quarts in volume and about 2 inches deep.
  10. Assemble Pot Pie: Pour the beef stew filling into the baking dish, spreading evenly.
  11. Top with Puff Pastry: Roll out the thawed puff pastry sheet to fit the baking dish, allowing for an overhang to tuck into the edges for a sturdy crust. Lay the pastry over the filling and tuck the edges around it.
  12. Egg Wash and Vent: Brush the puff pastry lightly with the whisked egg yolk to promote browning and shine. Cut 4 slits in the pastry top to allow steam to escape during baking.
  13. Bake Pot Pie: Place the assembled pot pie in the preheated oven and bake for 30 to 35 minutes, or until the puff pastry is golden-brown and puffed.
  14. Serve: Remove from oven, garnish with additional thyme leaves or parsley, and serve hot for a comforting and hearty meal.

Notes

  • The beef stew filling can be prepared a day in advance and refrigerated; this also helps deepen the flavors.
  • Use organic or high-quality beef chuck for the best tenderness and flavor.
  • For best results, keep the puff pastry cold until ready to use to ensure a flaky crust.
  • If sauce reduces too much during simmering, cover the pot for the last 15-20 minutes to retain moisture.
  • Adjust seasoning to taste before assembling the pot pie.
