This hearty and flavorful Beef Curry recipe features tender chuck roast slowly simmered with aromatic spices, garlic, ginger, and tomatoes to create a rich, comforting dish perfect for a satisfying meal served over rice.

Ingredients

Meat

  • 2 1/2 pounds chuck roast, cut into bite-sized pieces

Spices & Aromatics

  • 2 tablespoons curry powder
  • 2 garlic cloves, minced
  • 2 tablespoons ginger, minced

Vegetables & Others

  • 1 large yellow onion, diced
  • 28 ounces diced tomatoes (canned)
  • 2 teaspoons lemon juice

Oils & Seasoning

  • 3 tablespoons vegetable oil (divided)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Heat the oil: Heat 2 tablespoons of the vegetable oil in a heavy-bottomed pot over medium-high heat until it just begins to smoke, preparing the pan for searing the beef.
  2. Brown the beef: Generously season the chuck roast pieces with kosher salt and freshly ground black pepper. Add the beef in batches to the hot oil and brown on all sides, ensuring good searing. Remove browned pieces and set aside to prevent overcrowding the pan.
  3. Sauté onions and aromatics: Reduce heat to medium and add the remaining 1 tablespoon of oil if needed. Add the diced onions and sauté until translucent, about 5 minutes. Stir in minced garlic, minced ginger, and curry powder, cooking until fragrant for about 30 seconds to release spices' aromas.
  4. Add liquids and deglaze: Pour in the diced tomatoes and lemon juice, scraping the bottom of the pan with a spoon to loosen any flavorful browned bits from the beef and onions.
  5. Simmer the curry: Return all the browned beef pieces to the pot. Bring the mixture to a gentle simmer, cover with a lid, and cook for 45 minutes to allow the beef to become tender and absorb the curry flavors. Stir occasionally to prevent sticking.
  6. Serve: Once cooked, serve the beef curry hot over freshly cooked rice for a complete and delicious meal. Enjoy!

Notes

  • Use a heavy-bottomed pot or Dutch oven for even heat distribution and better browning.
  • Browning the beef in batches prevents steaming and ensures a richer flavor.
  • Adjust the amount of curry powder to suit your spice preference.
  • Serve with basmati rice or naan bread for an authentic experience.
  • This curry can be made a day ahead as flavors deepen overnight.
  • Leftovers store well refrigerated for up to 3 days or frozen for up to 3 months.
