Perfect for a comforting family meal, it requires minimal hands-on time and yields juicy, flavorful meat infused with rich gravy. The slow cooking process ensures melt-in-your-mouth tenderness while the creamy mushroom sauce adds luscious depth.

Ingredients

Main Ingredients

  • 4 1/2 lbs boneless beef bottom round roast
  • 2 cups (1/2 lb) peeled and thick sliced or baby carrots
  • 1 lb fresh mushrooms, thickly sliced
  • 1 large onion, finely diced
  • 6 cloves garlic, pressed (1/2 head)

For the Gravy

  • 1/3 cup all-purpose flour
  • 1 oz onion soup or dip mix (1 packet)
  • 1/2 Tbsp Mrs. Dash salt-free seasoning
  • 2 cups reduced sodium vegetable or beef broth
  • 1/2 cup red wine
  • 1 cup heavy whipping cream
  • 2 tsp salt
  • 4 Tbsp extra light olive oil (or other high smoke point oil)

Instructions

  1. Prepare carrots: Line the bottom of the slow cooker with thickly sliced carrots to create a base for the roast and infuse the dish with sweet vegetable flavors during cooking.
  2. Sear the beef roast: Heat a large heavy-bottomed skillet over very high heat. Add 4 Tbsp extra light olive oil and swirl to coat. Once the oil is blazing hot, sear and brown all sides of the beef bottom round roast for 2-3 minutes per side to lock in juices and develop a flavorful crust. Wear an apron to protect from oil splatters. Transfer the seared roast to the slow cooker, placing it on top of the carrots.
  3. Sauté mushrooms and onions: In the same hot skillet, sauté the thickly sliced mushrooms and finely diced onions over medium-high heat for 5-7 minutes until soft and fragrant. Stir in the pressed garlic and cook for an additional minute. Remove from heat to use in the gravy.
  4. Make the gravy base: In a medium saucepan, whisk together 2 cups of broth, 1 cup heavy cream, 1 packet onion soup mix, 1/2 Tbsp Mrs. Dash seasoning, 1 tsp salt, and 1/3 cup all-purpose flour to prevent lumps. Heat over medium-high heat, whisking continuously until the mixture thickens to a gravy-like consistency.
  5. Combine gravy ingredients: Stir the sautéed mushroom-onion-garlic mixture into the gravy base. Whisk in the 1/2 cup red wine and bring the entire mixture to a simmer, allowing the flavors to meld and the sauce to thicken slightly.
  6. Cook in the slow cooker: Pour the mushroom gravy over the beef roast and carrots in the slow cooker. Cover with the lid and cook on high heat for 6 hours, allowing the beef to become tender and infused with the rich flavors of the gravy.
  7. Finish and serve: Just before serving, transfer the beef to a serving dish and shred the meat with forks. Pour the hot gravy over the shredded beef immediately so it can absorb the sauce. Taste and add more salt if needed. Serve warm and enjoy a comforting, hearty meal.

Notes

  • Using extra light olive oil or another high smoke point oil ensures a good sear without burning.
  • If preferred, baby carrots can be used instead of peeled and thick sliced carrots.
  • To deepen flavor, choose a dry red wine like Cabernet Sauvignon or Merlot for the gravy.
  • For a lower fat option, substitute heavy cream with half-and-half or omit it and adjust seasoning.
  • Ensure the beef is adequately seared to lock in juices — this step is critical for flavor.
  • Cooking times may vary depending on slow cooker model; check tenderness after 5 hours if unsure.
