Ingredients

BBQ Seasoning Mix

  • 1/4 cup chili powder
  • 1 tablespoon paprika
  • 1/2 teaspoon ground thyme
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (or less for a milder flavor)
  • 1 tablespoon brown sugar

Main Ingredients

  • 2 boneless chicken breasts (cut into cubes)
  • 3 green peppers (cut into thick pieces)
  • 3 red peppers (cut into thick pieces)
  • 1 large onion (cut into thick pieces)
  • 10-12 skewers (soaked for at least 30 minutes)
  • 2 tablespoons olive oil

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes or overnight to prevent burning during grilling.
  2. Prepare BBQ Seasoning: In a small bowl, combine chili powder, paprika, ground thyme, salt, garlic powder, black pepper, cumin, cayenne pepper, and brown sugar to create the BBQ seasoning mix.
  3. Season Chicken: Toss the cubed chicken breasts in the BBQ seasoning mixture until evenly coated. Let sit for 10 minutes to absorb the flavors.
  4. Assemble Skewers: Thread the skewers alternately with pieces of seasoned chicken, green and red peppers, and onion, filling the skewers about halfway with approximately 3-4 pieces of each ingredient.
  5. Preheat Grill: Heat your grill to 400º Fahrenheit to ensure it is hot enough for proper cooking and searing.
  6. Grill Skewers: Place the skewers on the grill and cook for 10-15 minutes. Brush occasionally with olive oil and turn the skewers regularly for even cooking. Ensure the internal temperature of the chicken reaches 165ºF for food safety.
  7. Serve: Once cooked through, remove the skewers from the grill and serve them warm for a tasty BBQ meal.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • Adjust cayenne pepper to control the spiciness of the seasoning.
  • You can substitute the chicken breasts with chicken thighs for more juiciness.
  • Consider serving with a side of rice or a fresh salad for a complete meal.
  • Leftover skewers can be refrigerated and reheated, but are best consumed fresh.
