This BBQ Chicken Pizza combines a crispy, golden crust with tangy barbecue sauce, tender rotisserie chicken, melted mozzarella cheese, and sharp red onions, finished with a fresh cilantro garnish for a vibrant and flavorful homemade pizza experience.

Ingredients

Pizza Base

  • 1 pound store-bought or homemade pizza dough
  • Cornmeal, for dusting baking sheet

Toppings

  • 1/2 cup store-bought barbecue sauce, divided
  • 1 cup diced rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 1/3 cup thinly sliced red onions
  • Chopped cilantro, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 500ºF to ensure it's hot enough for a crispy crust and perfectly cooked toppings.
  2. Prepare Dough: Roll out the pizza dough on a lightly floured surface until it is roughly 12 inches wide and about 1/4 inch thick, creating an even base for the pizza.
  3. Prepare Baking Sheet: Invert a baking sheet and sprinkle it liberally with cornmeal to prevent sticking and add texture to the crust. Transfer the rolled-out dough onto the prepared baking sheet.
  4. Mix Chicken and Sauce: In a medium bowl, toss the diced rotisserie chicken with half of the barbecue sauce (1/4 cup) to coat it evenly with flavor.
  5. Assemble Pizza: Spread the remaining 1/4 cup barbecue sauce evenly over the dough, leaving a 1/2-inch border around the edges to form the crust. Next, sprinkle the shredded mozzarella cheese over the sauce, followed by the coated chicken pieces, and then scatter the thinly sliced red onions on top.
  6. Bake: Place the pizza in the preheated oven and bake for 10 to 12 minutes, rotating the baking sheet halfway through to ensure even cooking. Bake until the crust is golden brown and the cheese is melted and bubbly.
  7. Finish and Serve: Remove the pizza from the oven, transfer it to a cutting board, sprinkle with chopped cilantro for a fresh finish, slice, and serve hot.

  • Using rotisserie chicken is a time-saver and adds a delicious smoky flavor.
  • Sprinkling cornmeal on the baking sheet helps to prevent sticking and gives a slight crunch to the crust bottom.
  • Rotate the pizza halfway through baking to ensure even cooking and browning.
