A flavorful and easy-to-make Barbeque Chicken Pizza that combines tangy barbecue sauce, tender shredded chicken, melted mozzarella cheese, and fresh cilantro on a crispy homemade pizza crust. Perfect for a quick weeknight dinner or casual gathering.

Ingredients

Pizza Dough

  • Dough for one large pizza

Toppings

  • 1 1/2 cups cooked chicken, shredded (rotisserie or about 2 chicken breasts)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup barbecue sauce
  • 1/4 large red onion, very thinly sliced
  • Fresh cilantro, to taste

Instructions

  1. Preheat and prebake dough: Preheat your oven to 450 degrees F (232 degrees C). Place your pizza dough onto a baking sheet or pizza stone and prebake it for 6 minutes to set the crust.
  2. Apply BBQ sauce and initial toppings: Spread a thin layer of barbecue sauce evenly over the prebaked pizza crust. Then add a thin layer of shredded mozzarella cheese followed by the thinly sliced red onions.
  3. Prepare chicken topping: In a bowl, toss the shredded rotisserie chicken with a few tablespoons of barbecue sauce until well coated. This adds extra flavor and moisture to the chicken.
  4. Add chicken and more cheese: Distribute the sauced chicken evenly over the pizza base. Then sprinkle another thin layer of shredded mozzarella cheese over the top.
  5. Final garnishing and bake: Add freshly chopped cilantro to taste. Bake the pizza at 450 degrees F for 10-15 minutes or until the crust is golden brown and the cheese is bubbly and melted. Remove from the oven and let cool slightly before slicing and serving.

Notes

  • Use rotisserie chicken for ease and better flavor.
  • Adjust the amount of barbecue sauce depending on your preferred tanginess.
  • Thin slicing the red onion prevents overpowering the pizza with onion flavor.
  • Fresh cilantro adds a bright, fresh note but can be omitted if preferred.
  • Prebaking the crust ensures it cooks through and stays crispy under the toppings.
