Ingredients

Chicken and Breading

  • 1 1/2 pounds thin sliced chicken breasts
  • Kosher salt, Fresh black pepper, and garlic powder, to season
  • 1/2 cup flour
  • 1/4 cup cornstarch
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 large egg
  • 2 cups (or more as needed) Panko bread crumbs
  • Vegetable or canola oil, for frying

Assembly

  • 12 slices mozzarella cheese
  • 12 slider rolls
  • Bang Bang Sauce (prepared separately)

Instructions

  1. Season the chicken: Start by seasoning both sides of the thin sliced chicken breasts with kosher salt, fresh black pepper, and garlic powder to taste. This ensures the chicken is flavorful before breading.
  2. Prepare the breading station: Set up three bowls: one with the flour and cornstarch mixed together, the second with buttermilk whisked together with hot sauce and the egg, and the third with the panko bread crumbs. This three-step breading method creates a crispy coating.
  3. Bread the chicken: Dredge each seasoned chicken breast first in the flour mixture, tapping off excess, then dip into the buttermilk mixture, allowing excess to drip off. Finally, coat thoroughly in panko bread crumbs, pressing gently to adhere the crumbs well. Place breaded chicken on a plate and repeat with all pieces.
  4. Fry the chicken: Heat a thin layer of vegetable or canola oil in a skillet over medium heat until hot. Fry the breaded chicken cutlets in batches without crowding the pan, adding more oil if necessary. Cook for 2-3 minutes per side or until the internal temperature reaches 165°F. Drain cooked chicken on paper towels to remove excess oil.
  5. Make the Bang Bang sauce: Whisk together the ingredients of your Bang Bang sauce in a small bowl and set it aside to use during assembly.
  6. Assemble the sliders: Cut the fried chicken cutlets into smaller slider-appropriate sizes. Place the pieces on slider rolls, top each with a slice of mozzarella cheese while the chicken is still warm to slightly melt the cheese. Drizzle generously with Bang Bang sauce and serve immediately.

Notes

  • Use thin-sliced chicken breasts to ensure quick and even cooking.
  • Do not overcrowd the skillet during frying to maintain oil temperature and crispiness.
  • Allow the cheese to melt slightly on the warm chicken for optimal texture and flavor.
  • If you prefer less spicy, reduce the hot sauce in the buttermilk mixture and Bang Bang sauce.
  • These sliders are best served fresh for maximum crunch; leftovers can be reheated in an oven to retain crispiness.
