This Bananas Foster French Toast recipe offers a decadent twist on classic French toast by combining a rich, custardy brioche base with a luscious caramelized banana and rum topping. Perfect for a special breakfast or brunch, it features tender, golden-baked slices of bread soaked in a cinnamon-vanilla egg mixture, finished under the broiler for a beautifully browned top, and topped with warm, caramelized bananas flambéed with rum for an indulgent finish.

Ingredients

French Toast Custard

  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 2 tablespoons unsalted butter, melted
  • 1 cup whole milk
  • 8 slices brioche bread (or thick white sandwich bread)

Bananas Foster Topping

  • 2 bananas, sliced
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup rum

Instructions

  1. Prepare Oven and Baking Sheet: Adjust your oven racks so one is at the lowest position and the other about 6 inches from the broiler element. Preheat the oven to 425°F (220°C). Coat the bottom of a rimmed baking sheet with cooking spray or vegetable oil to prevent sticking.
  2. Make the Custard Mixture: In a large bowl, whisk together eggs, vanilla, brown sugar, cinnamon, and sea salt until the sugar is dissolved and the mixture is smooth without any egg streaks. Add the melted butter and whisk until fully combined, then whisk in the whole milk thoroughly.
  3. Soak the Bread: Pour the custard mixture into the bottom of the prepared baking sheet. Place the slices of brioche bread into the custard, ensuring they are well coated. After placing all bread slices, flip each slice over, starting with the first placed, so both sides are evenly soaked. Let the bread absorb all remaining custard, about one minute.
  4. Bake the French Toast Bottoms: Place the baking sheet on the lower oven rack and bake the soaked bread until the bottoms are golden brown, approximately 10 to 15 minutes.
  5. Broil the French Toast Tops: Transfer the baking sheet to the upper rack. Turn the broiler on and broil the French toast until the tops are golden brown, 1 to 4 minutes. Rotate the baking sheet if necessary for even browning. Watch carefully to avoid burning.
  6. Prepare Bananas Foster Topping: While the French toast bakes, melt the butter and brown sugar in a large skillet over medium heat. Add the sliced bananas and cook for a few minutes until the mixture becomes caramelized and bubbly.
  7. Add Rum and Finish Topping: Pour in the rum and cook for another 1 to 2 minutes to flare slightly, allowing the alcohol to cook off and the sauce to thicken.
  8. Serve: Pour the warm Bananas Foster sauce generously over the baked French toast slices and serve immediately for a rich and flavorful breakfast experience.

Notes

  • Use brioche or thick white sandwich bread for a rich, tender texture.
  • Watch carefully during broiling to prevent burning, as it happens quickly.
  • You can substitute dark rum with bourbon or brandy if preferred.
  • For a non-alcoholic version, omit the rum and add a splash of vanilla extract instead.
  • Make sure to soak the bread both sides thoroughly for creamy custard texture.
