A quick and healthy baked oats recipe that combines rolled oats, ripe banana, egg, and maple syrup into a smooth batter, baked to perfection for a delicious single-serving breakfast or snack. Optional cocoa powder adds a rich chocolate twist.

Ingredients

Main Ingredients

  • ½ cup rolled oats
  • 1 ripe banana
  • 1 large egg
  • 1 tablespoon maple syrup
  • ½ teaspoon baking powder
  • Pinch salt
  • 1 tablespoon cocoa powder (optional, for chocolate version)

Other

  • Cooking spray (for greasing the bakeware)

Instructions

  1. Preheat Oven and Prepare Bakeware: Preheat your oven to 350°F (175°C). Grease a ramekin or any small oven-safe pan with cooking spray to ensure the baked oats don't stick.
  2. Blend Ingredients: Place the rolled oats, ripe banana, egg, maple syrup, baking powder, salt, and optional cocoa powder into a blender. Blend for about 1 minute until the mixture is smooth and well combined.
  3. Transfer and Bake: Pour the batter into the greased ramekin. Bake in the preheated oven for 20-25 minutes, or until a toothpick or cake tester inserted in the center comes out with just a few moist crumbs.
  4. Cool and Serve: Remove the baked oats from the oven and allow it to cool in the pan for about 10 minutes before serving. Optionally, you can add frosting or toppings of your choice.

Notes

  • You can substitute maple syrup with honey or agave nectar.
  • Adding cocoa powder makes a delicious chocolate version.
  • Ensure the banana is ripe for natural sweetness and better texture.
  • Use gluten-free rolled oats if a gluten-free diet is required.
  • Leftovers can be refrigerated and reheated for a quick breakfast.
