Featuring a creamy and flavorful chicken filling wrapped in crispy baked tortillas, they combine the richness of cream cheese with zesty spices and fresh herbs for a mouthwatering bite perfect for any occasion.

Ingredients

Filling

  • 4 ounces cream cheese
  • ⅓ cup salsa
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 2 cups cooked and shredded chicken
  • 1 cup shredded colby jack cheese
  • 1 tablespoon finely chopped green onion
  • 2 tablespoons finely chopped cilantro

Assembly

  • 8-10 small flour tortillas

Instructions

  1. Preheat: Preheat your oven to 425 degrees Fahrenheit. Prepare a baking sheet by lining it with foil and spraying lightly with cooking spray to prevent sticking.
  2. Make the Filling: Soften the cream cheese by microwaving it for 15-20 seconds. In a mixing bowl, combine the cream cheese with salsa, cumin, chili powder, garlic powder, lime juice, and salt. Mix well to create a smooth base for the filling.
  3. Add Chicken and Cheese: Fold in the cooked shredded chicken, shredded colby jack cheese, finely chopped green onion, and cilantro. Stir until all ingredients are evenly incorporated.
  4. Assemble Taquitos: Place about 3 tablespoons of the chicken mixture approximately 1 inch from the edge of each tortilla. Roll the tortilla tightly around the filling and place seam side down on the prepared baking sheet. Arrange the taquitos about 1 inch apart so they don’t touch.
  5. Bake: Bake the rolled taquitos in the preheated oven for 15-20 minutes, or until the tortillas are lightly browned and crisp around the edges.
  6. Serve: Remove from the oven and serve warm with sour cream, ranch dressing, or your favorite dipping sauce for an extra burst of flavor.

Notes

  • Use small flour tortillas to ensure the taquitos are easy to roll and bake evenly.
  • Feel free to substitute colby jack cheese with a Mexican blend for a different flavor profile.
  • For extra crispiness, brush the taquitos lightly with oil before baking.
  • These taquitos can be made ahead and frozen before baking; just add a few extra minutes to the bake time if cooking from frozen.
  • Adjust the level of spice by modifying the amount of chili powder and cumin to suit your taste.
