Ingredients

Main Taco Filling

  • 2 tablespoons extra virgin olive oil
  • 1 pound ground chicken (or ground beef or turkey)
  • 1 yellow onion, chopped
  • 2-3 teaspoons chipotle chili powder (adjust to taste)
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1/4-1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 3/4 cup water
  • 1/4 cup fresh cilantro, chopped

Taco Assembly

  • 12 hard shell taco shells (see notes for homemade option)
  • 2 cups shredded Mexican cheese blend

Cilantro Lime Ranch

  • 1 cup sour cream or plain Greek yogurt
  • 3/4 cup fresh cilantro, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup pickled jalapeños, chopped
  • 2 tablespoons pickled jalapeño brine
  • Juice from 2 limes
  • 1 teaspoon kosher salt

Optional Toppings

  • Avocado slices
  • Red onion slices
  • Additional chopped fresh cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) so it’s ready to crisp up the taco shells and melt the cheese.
  2. Cook the Meat and Onions: In a large skillet, heat the olive oil over high heat until shimmering. Add ground chicken and chopped onion, cooking while breaking up the meat with a spatula, until the chicken is browned and the onions are softened, about 5 minutes.
  3. Add Spices and Simmer: Stir in the chipotle chili powder, smoked paprika, ground cumin, garlic powder, crushed red pepper flakes, dried oregano, and kosher salt. Pour in 3/4 cup water, reduce heat to medium, and simmer until the sauce thickens and coats the chicken nicely, about 10 minutes. Remove from heat and fold in chopped fresh cilantro.
  4. Prepare Taco Shells: Arrange the hard taco shells on a baking sheet or in a 9x13 inch baking dish. Place them in the preheated oven and bake for 5 minutes to crisp them up slightly.
  5. Fill Tacos and Add Cheese: Remove taco shells from the oven and evenly distribute the cooked chicken filling among them. Sprinkle shredded Mexican cheese generously over each filled taco.
  6. Bake to Melt Cheese: Return the tacos to the oven and bake for an additional 10 minutes or until cheese is fully melted and bubbly.
  7. Make Cilantro Lime Ranch: While the tacos bake, combine sour cream (or Greek yogurt), finely chopped cilantro, garlic powder, onion powder, chopped pickled jalapeños, jalapeño brine, lime juice, and kosher salt in a glass jar or a bowl. Shake or stir vigorously until the ranch dressing is creamy and well combined.
  8. Serve: Remove the baked tacos from the oven and top each with a generous drizzle of cilantro lime ranch. Add optional toppings like avocado slices and red onion for extra freshness and texture. Serve immediately and enjoy!

Notes

  • For a homemade taco shell alternative, you can bake corn tortillas in a taco shape until crisp.
  • Adjust the amount of chipotle chili powder and crushed red pepper flakes according to your preferred spice level.
  • Using plain Greek yogurt instead of sour cream makes the ranch a bit lighter and adds protein.
  • Leftover taco filling can be stored in the refrigerator for up to 3 days.
  • For a gluten-free option, ensure taco shells are labeled gluten-free.
