Ingredients

Dry Ingredients

  • 1-1/2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 (5.3 ounce) containers blueberry Greek yogurt

Fruit

  • 1 cup fresh or frozen blueberries

Glaze

  • 2 cups powdered sugar
  • 1/3 cup milk
  • 2 teaspoons blueberry jam or mashed fresh blueberries

Instructions

  1. Preheat and Prepare Muffin Pan: Preheat your oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan with non-stick cooking spray to ensure the fritter bites come out easily.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined to ensure even leavening and sweetness.
  3. Combine Wet Ingredients: In a separate smaller bowl, whisk the melted unsalted butter, egg, vanilla extract, and blueberry Greek yogurt until smooth and fully incorporated.
  4. Combine Batter and Fold in Blueberries: Pour the wet mixture into the dry ingredients and stir gently until just combined. Carefully fold in the fresh or frozen blueberries, taking care not to overmix to maintain tender fritters.
  5. Fill Muffin Cups and Bake: Spoon the batter evenly into the prepared mini muffin cups, filling each almost to the top. Bake in the preheated oven for about 15 minutes, or until they start to turn a light golden brown on top.
  6. Prepare Broiler and Glaze: Remove the fritters from the oven and switch the oven to high broil. Line a baking sheet with parchment paper. Transfer the baked fritters carefully onto this baking sheet. In a small bowl, whisk together the powdered sugar, milk, and blueberry jam until smooth to create the glaze.
  7. Glaze and Broil Fritters: Dip the top of each fritter into the blueberry glaze and set them upright on the baking sheet so the glaze can drip down the sides. Place the baking sheet under the broiler and broil for 3 to 4 minutes, rotating every minute to caramelize evenly and achieve a crisp, golden finish. Watch closely to prevent burning.
  8. Final Glaze and Setting: Once the tops begin to caramelize and brown in spots, remove the fritters from the oven. Brush the remaining glaze over the tops for extra sweetness and shine. Allow the glaze to set for about 15 minutes before serving.

Notes

  • Using Greek yogurt adds moisture and tanginess to the fritters.
  • Fresh or frozen blueberries can be used interchangeably; just do not thaw frozen completely to avoid excess moisture.
  • Monitor fritters carefully during broiling to prevent burning due to sugar caramelization.
  • These bites freeze well; reheat gently to restore crispness.
  • For a dairy-free option, substitute butter and yogurt with plant-based alternatives.
