Ingredients

Shrimp

  • 1 pound shrimp, peeled and deveined

Vegetables & Herbs

  • 2 avocados, cubed
  • 2 Persian cucumbers, chopped
  • 1/2 cup tomatoes, chopped
  • 1-2 jalapeños, seeded and chopped
  • 1 small shallot, finely chopped
  • 1 clove garlic, grated
  • 1/2 cup cilantro, roughly chopped

Flavorings

  • 1 tablespoon lime zest
  • 1/4 cup lime juice
  • 1/3 cup salsa verde
  • Flaky sea salt, to taste

Instructions

  1. Cook the shrimp: Bring a large pot of water to a boil over high heat. Add the shrimp and simmer until they turn pink, about 2-3 minutes depending on their size. Drain the shrimp and immediately rinse them under cold water to stop the cooking process.
  2. Prepare the shrimp: Once cooled, chop the shrimp into bite-sized pieces suitable for salsa.
  3. Combine ingredients: In a large bowl, add the chopped shrimp, cubed avocados, chopped Persian cucumbers, tomatoes, jalapeños, finely chopped shallot, grated garlic, and roughly chopped cilantro.
  4. Add flavorings and season: Stir in lime zest, lime juice, salsa verde, and season with flaky sea salt to taste. Gently mix all the ingredients to combine without mashing the avocado.
  5. Serve: Enjoy the avocado shrimp salsa immediately with plenty of tortilla chips or as a fresh topping on tacos or grilled fish.

Notes

  • For less heat, remove all seeds from the jalapeños or reduce the quantity.
  • Use fresh lime juice and zest for the best citrus flavor.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
  • This salsa is best served fresh but can be stored in the refrigerator for up to 1 day.
  • To keep avocado from browning, add lime juice and cover tightly with plastic wrap.
