A delicious and authentic Chicken Shawarma recipe featuring marinated grilled chicken breasts served with a refreshing yogurt sauce and fresh vegetables, wrapped in homemade flatbread. Perfect for a flavorful and satisfying Mediterranean-style meal.

Ingredients

Marinade

  • 1/2 cup plain yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp garlic, minced
  • 1/2 tsp cinnamon
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 large chicken breasts (1.25 lbs)

Yogurt Sauce

  • 7 oz plain Greek yogurt
  • 1/4 tsp garlic, minced
  • 1/4 tsp dried dill
  • 1/4 tsp salt

Vegetables & Other

  • 1/2 head romaine lettuce
  • 1 medium cucumber
  • 2 medium roma tomatoes
  • 1/4 red onion (optional)
  • 4 homemade naan (pita or flatbread)

Instructions

  1. Prepare the Marinade: In a small bowl, combine the plain yogurt, lemon juice, minced garlic, cinnamon, dried oregano, salt, ground nutmeg, and ground cloves to create a flavorful marinade.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, ensuring each piece is well coated. Cover and refrigerate for 4 to 24 hours to allow the flavors to deeply penetrate the meat. Optionally, slice the chicken into strips before marinating to maximize flavor absorption.
  3. Make the Yogurt Sauce: In another bowl, mix the plain Greek yogurt with minced garlic, dried dill, and salt. Refrigerate this sauce until you’re ready to assemble the sandwiches.
  4. Grill the Chicken: Remove the chicken from the marinade and grill it on an indoor tabletop grill or any grill of your choice. Grill until fully cooked through, flipping occasionally if your grill does not have a lid that cooks both sides evenly. Cooking time varies depending on your grill.
  5. Rest and Slice the Chicken: Let the grilled chicken rest for a few minutes to redistribute its juices, then slice it into strips if not already done before grilling.
  6. Prepare the Vegetables: Chop and rinse the romaine lettuce, slice the cucumber and roma tomatoes, and thinly slice the optional red onion.
  7. Assemble the Shawarma Sandwiches: Spread a generous amount of the yogurt sauce on each flatbread. Layer with grilled chicken strips and top with the fresh vegetables. Roll the flatbread to enclose the filling. Optionally, wrap the sandwich in foil to help keep it wrapped while eating.

Notes

  • Marinate the chicken for at least 4 hours to develop the best flavor; overnight marination is ideal.
  • Slicing the chicken before marinating increases surface area and intensifies flavor absorption.
  • If you don’t have a grill, you can cook the chicken on a grill pan or in a skillet on the stovetop.
  • Use homemade naan, pita, or any flatbread of your choice for wrapping.
  • Adjust the amount of garlic and spices in the marinade according to your taste preference.
