A vibrant and flavorful Asian Chicken Slaw salad that's colorful, packed with fresh vegetables, and enhanced by a tangy peanut dressing. This easy-to-make salad is perfect for lunch or dinner, and using shredded rotisserie chicken makes it a convenient, protein-rich meal that tastes even better after resting.

Ingredients

Dressing

  • ⅓ cup rice wine vinegar
  • 3 tablespoons soy sauce
  • 1 lime, juiced
  • ½ cup peanut butter
  • 2 cloves garlic, finely chopped

Salad

  • ½ head Napa cabbage, thinly sliced
  • ½ head Red cabbage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large carrot, shredded
  • 6 green onions, thinly cut on the bias
  • 1 avocado, thinly sliced
  • Fresh basil, thinly sliced
  • Fresh cilantro, to taste
  • 1-2 cups shredded chicken breast (optional)

Instructions

  1. Prepare the Dressing: In a bowl, whisk together rice wine vinegar, soy sauce, lime juice, peanut butter, and finely chopped garlic until you achieve a smooth, well-emulsified dressing with balanced tanginess and creaminess.
  2. Combine Vegetables: In a large mixing bowl, add the thinly sliced Napa cabbage, red cabbage, red and yellow bell peppers, shredded carrot, and green onions. Toss gently to mix all the fresh ingredients evenly.
  3. Add Herbs and Protein: Add the sliced avocado, fresh basil, and cilantro to the vegetable mixture. If using, incorporate the shredded chicken breast to boost protein content and make the salad more filling.
  4. Toss with Dressing: Pour the prepared peanut dressing over the combined salad ingredients. Toss thoroughly to ensure all pieces are coated evenly with the flavorful dressing.
  5. Adjust and Serve: Taste the salad and adjust seasoning by adding extra soy sauce if desired. Serve immediately for the freshest flavors, or let it sit for 10-15 minutes to let the flavors meld for an even more enhanced taste experience.

Notes

  • The shredded chicken is optional; this salad works well as a vegetarian dish without it.
  • For an extra crunch, consider adding chopped peanuts or toasted sesame seeds on top just before serving.
  • Use a good quality peanut butter smooths the mixing and enhances flavor.
  • This salad can be prepped ahead and stored in the refrigerator, though avocado should be added just before serving to prevent browning.
  • Adjust soy sauce and lime juice quantities to balance saltiness and acidity to your taste preference.
