Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1 cup unsalted butter, melted

Cheesecake Filling

  • 3 boxes cream cheese, softened (8 oz each)
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 3 tablespoons lemon juice
  • 1 1/4 cups heavy whipping cream, chilled
  • 3/4 cup powdered sugar
  • 1 tablespoon vanilla extract

Toppings and Decoration

  • 1 can Cherry Pie Filling (We used Lucky Leaf)
  • 1 can Blueberry Pie Filling (We used Lucky Leaf)
  • 1 tablespoon white edible star sprinkles

Instructions

  1. Prepare the crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl until well mixed. Use your hands to press the crust evenly into an ungreased 13"x9" pan, ensuring it is compact and level.
  2. Make the cheesecake filling: In a large bowl, use an electric mixer to beat together the softened cream cheese, sour cream, lemon juice, and granulated sugar until the mixture is smooth and creamy. In a separate bowl, whip the heavy cream with vanilla extract and powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a spatula until fully combined.
  3. Assemble the cheesecake: Spread the cream cheese filling evenly over the prepared crust. Cover the pan and refrigerate for 4-6 hours or overnight to allow the cheesecake to chill and set firmly.
  4. Decorate the cheesecake: Using a toothpick, lightly sketch the pattern of the American flag onto the surface. Carefully spoon the blueberry pie filling to form the blue field and the cherry pie filling to create the stripes. Sprinkle the white edible star sprinkles over the blueberry section to complete the flag design.
  5. Store and serve: Store any leftover cheesecake in an airtight container or cover with plastic wrap, refrigerating for up to 3-4 days. Note that the crust may soften over time but the flavor remains delightful.

Notes

  • Do not freeze the assembled cheesecake as thawing may alter the texture. Instead, freeze the filling separately and assemble just before serving.
  • Ensure the cream cheese is properly softened to avoid lumps in the filling.
  • The cheesecake requires at least 4 hours to set but overnight chilling yields best texture.
  • You can substitute the pie fillings with fresh fruits if preferred, though the jelly-like consistency helps maintain the flag design.
