Delight in these classic Almond Cookies, featuring a crisp exterior and tender, flavorful almond-infused center. Perfectly sweetened and enhanced with almond extract, these cookies are coated in powdered sugar and topped with whole almonds, making them an irresistible treat for any occasion.

Ingredients

Dry Ingredients

  • 3¾ cups almond flour (375g)
  • 1½ cups white sugar (300g)
  • ¼ tsp salt
  • ¾ cup powdered sugar (90g)

Wet Ingredients

  • 3 large egg whites (90g)
  • 1 tsp almond extract

Toppings

  • ½ cup whole almonds

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Line two or three baking sheets with parchment paper to prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, sift the almond flour to eliminate lumps, then combine it evenly with the white sugar to ensure a consistent texture.
  3. Whip Egg Whites: Using a stand mixer with a whisk attachment or a hand mixer, beat the egg whites with the salt on high speed until stiff peaks form, which typically takes about 4 minutes.
  4. Combine Ingredients: Gently fold the whipped egg whites into the almond flour and sugar mixture. Add the almond extract and stir carefully until a dough forms, taking care not to deflate the egg whites.
  5. Form Cookie Balls: Divide the dough into 36 equal portions and roll each into a smooth ball.
  6. Coat with Powdered Sugar: Place powdered sugar in a shallow bowl and roll each dough ball in it until fully coated.
  7. Arrange on Baking Sheets: Place the coated cookie balls on the prepared baking sheets, spacing them about 3 inches apart to allow for spreading.
  8. Add Almond Topping: Press a whole almond gently onto the top of each cookie ball, slightly flattening them; some cracking is normal during baking.
  9. Bake: Bake in the preheated oven for 15 minutes until the cookies are lightly golden and firm on the outside.
  10. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely, ensuring a perfect texture.

Notes

  • Ensure the egg whites are whipped to stiff peaks for the best cookie texture and lift.
  • Do not overmix the dough to maintain its light and airy character.
  • Spacing cookies 3 inches apart prevents them from sticking together during baking.
  • The cookies may crack slightly; this is normal and adds to their rustic charm.
  • Store cookies in an airtight container to keep them fresh and crisp.
