Enjoy perfectly crispy skin and fluffy insides with this easy Air Fryer Baked Potato recipe. Using the air fryer ensures a quicker cook time compared to traditional baking, delivering a tender, flavorful potato with minimal oil and effort. Customize with your favorite toppings for a comforting side dish or snack.

Ingredients

Potatoes

  • 2 large or 4 small russet potatoes (as many as will fit in your air fryer in a single layer)

Seasoning

  • 1 1/2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt

Toppings (Optional)

  • Butter
  • Nonfat plain Greek yogurt or sour cream
  • Chopped fresh chives

Instructions

  1. Rub: Scrub and dry the potatoes thoroughly. Rub each potato evenly with extra-virgin olive oil and sprinkle kosher salt all over the surfaces. Pierce each potato several times with a fork to allow steam to escape during cooking.
  2. Cook: Preheat the air fryer to 400°F (204°C). Arrange the potatoes in a single layer inside the air fryer basket or tray, making sure they don’t touch to allow the skins to crisp evenly. Air fry for 25 minutes.
  3. Flip: Using tongs, carefully flip each potato over to ensure even cooking on all sides.
  4. Continue Cooking: Return the potatoes to the air fryer and cook for an additional 10 to 25 minutes, depending on their size. Cook until a fork easily pierces the potatoes, indicating they are tender inside.
  5. Cut and Serve: Once cool enough to handle, use a sharp knife to cut a lengthwise slit down the center of each potato. Gently squeeze the sides to open the potato and fluff the interior. Add desired toppings such as butter, nonfat plain Greek yogurt or sour cream, and chopped fresh chives. Serve hot.

Notes

  • For best results, choose russet potatoes as they produce fluffy interiors and crispy skins.
  • Do not overcrowd the air fryer basket; potatoes need space for the hot air to circulate evenly.
  • Cooking time will vary based on the size of the potatoes; adjust accordingly.
  • Let potatoes cool slightly before handling to avoid burns.
  • Feel free to customize with your favorite toppings like shredded cheese, bacon bits, or sour cream.
