Delightful and decadent, these 7-Layer Cookies combine a crisp graham cracker base with layers of shredded coconut, semisweet chocolate chips, butterscotch chips, sweetened condensed milk, and crunchy pecans. Baked to gooey perfection and served chilled, they make a perfect treat for any occasion.

Ingredients

Crust

  • 1/2 cup salted butter, melted
  • 1 1/2 cups graham cracker crumbs

Layers

  • 1 cup sweetened shredded coconut
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup pecans

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Lightly grease an 11-by-7-inch baking pan to prevent sticking and ensure easy removal of the cookies.
  2. Make the Crust: In a medium bowl, combine the melted salted butter with graham cracker crumbs. Stir thoroughly until the mixture is well blended, then press the mixture firmly into the bottom of the prepared pan, forming an even crust layer.
  3. Layer the Ingredients: Sprinkle the shredded sweetened coconut evenly over the crust, followed by a layer of semisweet chocolate chips, and then the butterscotch chips, distributing each ingredient uniformly.
  4. Add Condensed Milk and Pecans: Slowly pour the entire can of sweetened condensed milk over the layered ingredients to bind them together. Finally, sprinkle the pecans evenly on top to add a crunchy texture.
  5. Bake: Place the pan into the preheated oven and bake for 25 minutes, or until the edges are golden and the mixture is bubbling slightly.
  6. Cool and Serve: Remove the pan from the oven and allow it to cool on a wire rack. Once cooled, refrigerate the pan to chill the cookies thoroughly before cutting and serving cold for best texture and flavor.

Notes

  • You can substitute pecans with walnuts or almonds if preferred.
  • For an added twist, try mixing in dried fruits or using white chocolate chips instead of butterscotch.
  • Ensure to press the crust mixture firmly to create a sturdy base so that the layers hold together well.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
