A quick and delicious 15-minute meal featuring savory chicken wraps filled with shredded chicken, sweetcorn, red onion, creamy cream cheese, barbecue sauce, and melted mozzarella cheese. These versatile wraps can be served immediately or pan-fried for a golden, crispy finish, perfect for lunches, picnics, or a fast weeknight dinner.

Ingredients

Main Ingredients

  • 4 Chicken breasts (cooked, about 600g, shredded)
  • 325 g Sweetcorn (1 tin, drained)
  • 1/2 Red onion (finely chopped)
  • 100 g Cream cheese
  • 2 tbsp Barbecue sauce
  • 125 g Grated mozzarella (or cheddar)
  • 4 Large wraps
  • Salt and freshly ground black pepper to taste

Optional for Cooking

  • 1 tbsp Sunflower oil (for frying)

Instructions

  1. Shred the Chicken: If using whole cooked chicken breasts, shred them finely using two forks or a mixer. This creates a perfect texture for the wrap filling.
  2. Mix the Filling: In a large bowl, combine the shredded chicken, drained sweetcorn, finely chopped red onion, cream cheese, barbecue sauce, grated mozzarella, salt, and pepper. Stir well until all ingredients are fully incorporated.
  3. Assemble the Wraps: Divide the chicken mixture evenly among the large wraps, placing the filling in the center of each wrap.
  4. Fold and Roll: Fold the sides of each wrap inward, then tightly roll up from the bottom to enclose the filling securely.
  5. Optional Pan-Fry: Heat sunflower oil in a sauté pan over medium-low heat. Place the wraps seam side down in the pan and cook for 4-5 minutes until the bottom is golden. Carefully flip and cook the other side for another 4-5 minutes until golden and the cheese inside has melted. Keep heat low to avoid burning the wrap while melting the cheese.
  6. Serve: Serve the wraps immediately if pan-fried, or enjoy them fresh without frying. They can also be wrapped up for lunches or picnics.

Notes

  • Using cooked chicken breasts is essential—the dish requires shredded cooked chicken for texture and flavor.
  • Grated mozzarella can be substituted with cheddar cheese based on preference.
  • For a quicker preparation, pre-cooked rotisserie chicken can be shredded and used instead.
  • If not frying, the wraps can be eaten as-is for a lighter option.
  • When pan-frying, maintain low to medium-low heat to ensure the cheese melts without burning the wraps.
